Morning, ya'll! Another day in the clouds for us so far this morning. Yesterday's high was 47 and the low was 38 and the clouds hung around all day. It seems as though that is the theme for the rest of the week as well. The mountain received .83" of rain and most of that was overnight. It's not too chilly today though, the temperature is already 47, so at least it wont be too cold on the way up today. But don't let that lull you into a false sense of security....always pack warm, dry clothes to change into and always have that rain gear handy!

A lot of people have been asking for the no-bake cookie recipe....so without further adieu...

Those sound delicious. What temp set the oven to and how long do they bake?

I'd say set the oven to about 500 degrees, and cook them a little over three hours -- they'll be perfect! ; )

Thank you Ruthie. In padt trips up to LeConte, we have asked for this recipe but the previous manager acted as if it were top secret. Thank you for sharing this deliscious treat and for being so kind.

That is strange, The manager gave me the recipe for the No-Bakes and the veggie loaf. She didn't seem to mind at all.

Ruthie you are A-OK in my books! You are definitely scoring some "brownie" points......or should I say "no-bakes" points. Thank you. Although, I agree they taste better up there, we can have a little taste of LeConte for those of us for whatever reason cannot make the journey. Hats off to you.

Rain, rain, foretasted for most of next week. I'm so disgusted, I think I'll just stay home. In fact, I think I've give up on the Smokies altogether.

Ruthie, thanks for posting that recipe! I go to the Warrenton/Round Top antique week here several times a year and bought those cookies at one of the local church bake sales there a few years back. They haven't had them since but I keep checking (in fact just last week). The ladies there didn't know what I was looking for and I didn't know what they were called, just that they were chocolate with oatmeal in them. Can't wait to make them and if I'm lucky I'll get to eat them at the lodge later this year!
